Black Bean and Sweet Potato Burgers

For a twist on traditional burgers, try this black bean version.  They’re high in fiber, vitamins, minerals, and flavor.  Bake some sweet potatoes ahead of time and save the leftovers for this fabulously healthy dinner!

Ingredients:

3 large sweet potatoes, baked, skin on
2 cans black beans
1 onion, finely chopped
1 cup cilantro, chopped
1 TBS cumin
1 tsp chili powder
2 tsp Southwest Chipotle seasoning
1 tsp salt
1 cup oats
3 to 4 TBS olive oil or coconut oil

Directions:

Thoroughly wash sweet potatoes.  Coat with about 1 TBS (total)  olive oil and wrap in foil.  Bake at 400 degrees for about 1 hour, until soft.  Unwrap from foil and let cool. 

In a large bowl, gently mash the potatoes.  Add the rest of the ingredients, except for the oats.  Mix well with masher or electric mixer on low speed.  Add the oats and mix well.

Form the mixture into patties (about 8) and place on baking sheet.  Refrigerate for at least 30 minutes to help them keep their shape.

Add cooking oil to large skillet and heat to medium.  Carefully add burgers and cook about 7 minutes on each side, until browned.  Cook to desired crispness. 

Serve plain “as is” or on a bun.  Delicious!
