Creamy Crock-Pot Lima Bean Soup

For most people, the words  “lima beans” are not synonymous with “yummy”.  But the reality is that lima beans actually taste good!  I made up this soup and shared with some people at my office who were pleasantly surprised.  If you haven’t done so, give them a try.   They’re packed with protein and fiber, and are a good source of folate, potassium, iron, copper, phosphorous, magnesium and thiamin.  And this soup recipe makes them easy to prepare.  Soak the beans overnight (see package directions) for quicker prep in the morning.

Ingredients:

1 pound bacon, cooked and chopped (chopped ham works too)
1 lb package dried lima beans (pre-soak overnight or quick-soak in the morning)
1 small onion, chopped
3 carrots, chopped
¼ cup butter
1 tsp salt
½ tsp pepper
32 oz chicken broth
2 cups milk

Directions:

Soak lima beans according to package directions. 

Combine all of the ingredients in large crock-pot.  Cook on low about 8 hours.  Serve and enjoy!
