Artichoke, Spinach & Parmesan Stuffed Chicken Breasts
When you’re in a HUGE hurry but you want something tasty, start with a frozen entrée and add a few extra ingredients to “doctor it” up. I used the Naples brand Organic Stuffed Chicken Breast from Costco as the basis for this dinner. The chicken is stuffed with artichoke, spinach, and Parmesan cheese and comes ready to bake. I added extra spinach and some leftover chicken and served it over rice to make it a more complete meal, that was VERY easy to prep.
1 package Naples brand Organic Stuffed Chicken Breast (available at Costco)
3-4 cups baby spinach leaves
2 cups white rice
4 cups water
Leftover cooked chicken (if available)
Cook rice according to package directions.
While rice is cooking, heat stuffed chicken according to package directions. In large skillet, combine the warmed stuffed chicken breast with any extra chicken you might have, or omit if you don’t have any. In the skillet, chop the stuffed chicken breast into smaller pieces. Add the spinach leaves and cook over medium a couple of minutes to wilt these leaves. Serve over the rice and enjoy!
