MinestroneLeftover roast, chopped in small pieces (or whatever cooked meat you prefer or have on hand)

 4 cups organic vegetable broth (one, 32-oz carton)
2 (14.5 oz) cans stewed tomatoes (or several fresh)
1 onion, chopped
3-4 stalks celery, chopped
4 carrots, chopped
1 large head cabbage, shredded
4 cups spinach, finely chopped
1 large zucchini, sliced
2 cans garbanzo beans, drained
2 cans kidney beans, drained
2 TBS Italian seasoning

Combine all ingredients in large pot or crock pot. Simmer several hours then serve. This makes LOTS. Freeze leftovers!
