It doesn’t have to be complicated to be good! Cook the meat in a crock pot and the rest of the meal comes together in minutes. You’re also guaranteed leftovers for the next day or two!
Pork Roast, Green Beans, and Cous Cous
One, 3-5 pound pork roast (choose according to your family size and desire for leftovers)
1 large bag of raw green beans. They’re pre-washed to save time.
2-3 boxes cous cous
For the roast: Add 32 oz of chicken or vegetable broth to crock pot. Add roast, fat side up. Cover and cook on low, 6-8 hours, depending on size.
For green beans: Place 4 or 5 cups (about ½ the bag) in large skillet. Add water to cover the bottom of the pan. Simmer over medium-low heat about 10-15 minutes to soften beans. Sprinkle with your favorite seasoning before serving.
For the Cous Cous: Cook 2 or 3 boxes according to package directions. All you have to do is boil water, add the cous cous, cover and remove from heat, and let simmer. So easy! There are many varieties to choose from, so pick your favorite.
