There are SO many convenience foods available these days that can make dinner preparation fast and almost as healthy as homemade! The next few dinner menus I’ll be featuring items from Costco and other stores and sharing how you can tweak them to keep the carbs low and the nutrition high.
Panko Breaded Tilapia and Salad
Panko Breaded Tilapia (Trident brand from Costco)
Romaine lettuce (organic, pre-washed makes it easy to prep)
Shredded carrots (look for organic, if possible)
Purple onion, sliced thin
Any other veggies you have on hand
Bake tilapia according to directions, about 20-25 minutes at 450 degrees. Turn halfway through for best results. Each piece has 15 grams of carbs, so two pieces fits nicely into a 30-grams of carbs meal.
Prep salad fixings and use dressing of your choice.
Helpful hint: Preheat the oven the moment you walk in the door at night to save time! You’ll also be less tempted to order out for a pizza if you know something yummy can be ready in less timeJ.
