Rotisserie Chicken with Mashed Potatoes and Broccoli Salad

Save money and time by checking out your  local supermarket deli for some fast dinners.   This meal is quick and healthier than many fast food choices.

Rotisserie Chicken with Mashed Potatoes and Broccoli Salad

Ingredients:

Organic rotisserie chicken (available at Fred Meyer)
1-2 pounds Broccoli Burst salad
1-2 packages Idahoan Instant Mashed Potatoes, Roasted Garlic

Directions:

The mashed potatoes are easy to prepare – just boil some water and add then stir in the potato mix.  While not quite homemade, many instant mashed potatoes mixes are quite good.  While the water is boiling, cut the chicken.  Serve the Broccoli Burst salad as a flavorful side dish.  Use leftovers for lunch the next day.  The entire meal cost about $14 and provided many servings and leftovers.
