Spaghetti Squash Spaghetti

This recipe is SO easy because you can make so many variations.   If you’ve got tomatoes from your garden, use them up!  If not, use a jar of ready-made spaghetti squash.  If you have leftover chicken, use that as the meat.  If not, cook up some burger or sausage.  It all tastes great!   Keep the carbs lower by using spaghetti squash or boil up some pasta if desired.

Ingredients:

10-12 fresh tomatoes
1 onion, chopped
½ bunch fresh parsley, chopped
2 cloves garlic, crushed (optional)
2 TBS Italian seasoning
Salt and pepper to taste

(or substitute 1-2 jars ready-made spaghetti sauce for above ingredients)

1-2 spaghetti squash OR pasta of your choice.
1-2 cups cooked chicken (chopped), sausage, or burger

Directions:

Prepare spaghetti squash.   You can bake, boil, or microwave it.  Google “how to cook spaghetti squash” for some great tutorials.   

Cook chicken, sausage or burger or use up some leftovers.

In large pot, combine veggies and seasoning.  Add enough water to cover veggies and adjust depending on how thick you like your sauce.  Boil about 20 minutes to soften veggies.  Add meat and then let simmer as squash cooks.  Serve over squash or cooked pasta.
