Flax and Bran?!
Nutrition has always been my passion, so it was no surprise when I went back to college to become a dietitian. But my daughter, Jennifer, was less than thrilled with homework assignments consisting of “healthy stuff that tastes yucky” started showing up on the dinner table. She’d always eaten her fruits and veggies, but adding healthy omega-3 fats like flax and high-fiber foods like bran to our recipes opened up a whole new world. With love in our hearts – and ingredients strewn all over the kitchen – we mixed, baked, remixed and sampled, until…success! The Flax-Bran muffins were a hit. We loved them and so did everyone else – including some junk food junkies!

What we put into our bodies really does matter, but the foods have to taste good as well as be good for you! With this in mind, I have created delicious and yummy muffin and cookie recipes that also offer a smart blend of protein, fiber, and healthy fats.
Recipes for Muffins
Applesauce Raisin Muffins
Add ½ cup applesauce to liquid ingredients. Stir in ½ cup raisins before baking.
Add 1 cup fresh (or frozen) blueberries to muffin batter before baking. Stir very gently or you’ll have purple muffins … which actually are kind of cute!
White Chocolate Chip / Cranberry Muffins
Add ½ cup white chocolate chips and ½ cup dried cranberries to muffin batter before baking. Stir well.
Recipes for Cookies
Pumpkin / Chocolate Chip
Add 8 oz canned pumpkin and ½ tsp Pumpkin Pie Spice to wet ingredients (eggs, vanilla, etc.). Mix well with dry ingredient mix. Add ½ – ¾ cup of your favorite chocolate chips (dark, semi-sweet, milk chocolate, etc.). Add about 3 minutes baking time.
Replace the ¼ cup of milk with ¼ cup orange juice. Add the zest and juice of 1 orange plus ½ cup applesauce to wet ingredients. Mix well with dry ingrediets. Add about 3 minutes baking time.
Add 8 oz applesauce to wet ingredients. Mix well with dry ingredients. Add ½ – ¾ cup chopped walnuts. Add about 2 minutes baking time.
Super Healthy and Yummy Breakfast Cookie
High Protein, Healthy Fats, Tons of Fiber!
In large bowl, beat 1 egg, 1 tsp vanilla, ¼ cup avocado, 1 ripe banana, 1/8 cup milk and 2 TBS almond butter. Gradually beat in Gourmet Cookie Mix. Gently beat in ¼ cup pumpkin kernels, ¼ cup chopped walnuts, and 1/2 to ¾ cup dark chocolate chips.
Bake 13-15 minutes at 325. Amazing!!
