Easy Chicken Burrito/Enchiladas

Try this easy-to-assemble meal with just a few ingredients and great taste!


2 cans black beans, drained
2 cups brown rice, cooked
1 cup chopped steak or leftover meat or canned chicken
2 cartons or jars of salsa
2-3 cups shredded Mexican blend cheese
4-6 flour tortillas


Combine meat, rice, and beans in large bowl and mix well.  Pour 1 carton/jar of salsa into large baking pan.  Top with 2-3 tortillas.  Add rice/bean/meat mixture.  Top with 2-3 more tortillas.  Cover with the 2nd carton/jar of salsa and top with shredded cheese.  Bake at 375 degrees for 45-60 minutes. 

For a lower carb option, decrease the tortillas or just scoop out the beans/rice/meat and enjoy!
