If you’re looking for a low carb, gluten free alternative to bread, try this flax recipe to make your next grilled cheese sandwich. Crispy on the outside, gooey and cheesy on the inside!
Ingredients (per sandwich):
3 TBS ground flax
¼ tsp baking powder
Pinch of salt
1 TBS water
1 TBS coconut oil, melted
½-1 tsp butter
1 or 2 slices medium cheddar cheese (or cheese of your choice)
Combine flax, baking powder and salt in small bowl. Add egg, water, and melted coconut oil and mix well. Pour into greased (I use coconut oil) glass baking pan. (I use a 4” x 6” rectangular shaped pan if I’m making “bread” with this recipe). Microwave about 3 minutes. The “bread” will resemble a flat bread in thickness. Let cool a couple of minutes in the pan before removing. Cut in half to make 2 pieces.
Melt ½ tsp butter in small frying pan. Place 1 piece of the bread in the pan, top with 1 or 2 slices of cheese and the other piece of bread. Cook about 3 or 4 minutes over medium heat. Melt the other ½ tsp butter in the pan and then flip the sandwich over to brown on the other side. Cook an additional 3-4 minutes until bread is crispy and cheese is melted. This is SO yummy – and filling!
