Open-Faced Turkey, Cheese, and Avocado Sandwich

Sometimes simple is better, especially in the summer when you just want to be outside playing!  This open-faced sandwich makes a great breakfast, lunch, or dinner.  It provides protein, healthy fats, fiber, and a few carbs.  Choose gluten-free bread if that’s your preference (there are many good ones available now) and nitrate-free turkey to reduce your intake of preservatives.  Use Swiss cheese or whatever you desire.  Serve with sliced apple to add crunchiness and more color.  This meal is ready in moments!

Ingredients (per sandwich):

3-4 oz turkey lunch meat (nitrate-free if possible)
About 1 TBS pesto (or spread of your choice)
1 slice Swiss cheese (or cheese of your choice)
1 slice bread (gluten free or regular)
½ avocado, sliced
½ apple, sliced


Preheat oven to 400 degrees.   Top bread with Pesto, turkey, and the cheese.  Bake about 5-10 minutes to allow cheese to melt.  Remove from oven.  Top with sliced avocado and serve.
