Fruit with Kefir and Chia Seeds

If your goal is to amp up your digestive system, look no further than Kefir and chia seeds.  Kefir is a probiotic-packed fermented beverage that also contains calcium and protein.  You can find it on the dairy aisle in most grocery or health food stores, and with just a bit of effort you can make your own.  Chia seeds are a great source of fiber, antioxidants, and healthy omega-3 fats.   Enjoy a couple of hard-boiled eggs on the side for an easy-prep breakfast that’s full of amazing nutrition.

Ingredients:

½ cup Kefir
2-3 TBS chia seeds
1-2 cups fresh fruit (I like a cup of blueberries plus a banana, but any fruits work)

Directions:

Mix the Kefir and chia seeds in a small-medium bowl.  Let sit about 5 minutes.  The chia seeds will soak up the liquid Kefir, making the mixture thick.  Use more Kefir or other beverage to thin if too thick for your liking. Add chopped fruit or berries and mix well.
