Instead of using lettuce as the “wrap” for your meat and cheese, try using meat as the wrap for the veggies! Start with a good quality lunchmeat (I like Hormel Brand Natural Choice because it’s nitrite-free) and add veggies as desired. These make a great lunch or pin together with a festive toothpick for appetizers at a holiday party!
Ingredients:
This recipe serves 2 for a meal. Adjust ingredients depending on the number you’re serving and/or how big you want the roll-ups to be.
Meat: 6 oz thinly-sliced deli meat of your choice (buy according to the number of people you’re serving)
Veggies:
1 cup broccoli slaw
1 tomato, chopped
2-3 TBS mayonnaise (your choice) or pesto
Sliced avocado (optional)
Directions:
Mix veggies and mayo or pesto. Spoon onto meat and roll up tightly. Hold together with toothpicks if necessary. Enjoy!
