“Fried” Chicken

If you love the taste of fried chicken, but not the hassle and the unhealthy fats, you’ll love this easy recipe!

Ingredients:

1-2 pounds boneless, skinless chicken tenderloins or breasts
About 1/3 cup ground flax (flax meal)
About 1/3 cup whole wheat flour (or white)
About 1/3 cup Jiffy corn muffin mix
About ¼ cup Avocado, olive, or coconut oil
Salt and pepper to taste

Directions:

Combine flax, flour, corn muffin mix and salt and pepper  in bowl.  Heat oil in large frying pan over medium heat.  Coat chicken pieces with flour mixture.  Cook about 5 minutes on each side until chicken is done and the coating is crispy.  Fast, easy, and delicious!
