If you love nachos, you’ll love this easy meal you can fix at home.  Ramp up the nutrition by loading up the veggies and keep the carbs lower by using fewer chips.  This recipe calls for ground beef, but you can substitute any meat you want.


1-2 pounds ground beef
1 packet taco seasoning mix or Mexican spice blend
1 onion, chopped
1 each red, yellow, and orange bell pepper, chopped
Shredded cheese (Mexican blend works well and/or mozzarella) 

1 jar or carton of salsa (optional)


Preheat oven to 400 degrees.  Brown ground beef in large pan.  Add taco seasoning or spices plus about ½ cup and let simmer until water is absorbed.  While meat is cooking, chop veggies into small pieces. 

Place chips in a single layer on baking sheet.  Use more or less depending on your preference.  Top with meat, veggies, and cheese.  Bake 5-10 minutes until cheese is melted.  Serve with salsa (optional).
