Chicken, Cashew, and Cabbage Salad
Ingredients for Salad:
1-2 cups cooked chicken, chopped (you can cook your own, use Rotisserie, or even canned)
1 bag shredded cabbage
2 cups broccoli, chopped into small pieces
¼ cup purple onion, finely chopped
½ cup cashews (optional, but yummy!
Spaghetti noodles or other pasta, cooked (if desired)
Ingredients for Dressing:
1/3 cup light olive oil
1/3 cup white wine vinegar (or vinegar of your choice)
1/3 cup sugar (brown or white)
Combine ingredients for dressing and heat on stove or in microwave until sugar is melted and the dressing is heated thoroughly. Reserve for salad. Combine chicken, cabbage, broccoli, and onion in large bowl. Mix well. Add dressing and mix again. Top with cashews if desired.
